how do you like yours? i like them soupy and cooked to utter mush, and to keep the rice seperate. not picky at all about seasoning meat. white beans and rice with shrimp is s tier, limas with ham and rice and a fuckload of black pepper is underrated

I love rice and beans, such a good combination. Simple and cheap, yet there are so many different styles and varieties. I never get bored of it.
Some recipes you cook the rice and beans together, like Puerto Rican arroz con gandules. Other recipes you cook the beans and summer them in a rich sauce to eat with rice. There are Latino recipes, Cajun/creole, Jamaican coconut rice and peas, fuck, I think even even Middle Eastern rice and lentils counts.
I think my personal favorite is Cuban style rice and black beans. Served with roast chicken or picadillo and some sweet plantains.

olive oil in pot. add chopped onions, cilantro, salt, pepper, chopped bell peppers, bay leaf, and saute. add beans (my favorite is black beans), let simmer. sometimes i'll add freshly grated ginger, shiitake mushrooms. add hot pepper (fresh or flakes), smashed garlic.

White/brown rice, throw it in a rice cooker (or a pot) and steam some "basic" veg on top (carrots, broccoli, etc.).
Black beans, boil them for ~2 hours first until they're done, stirring now and then and replacing the evaporated water (from a kettle, ideally) as needed.
Quickly fry up some green onions, bean sprouts, and/or whatever else you want to mix in for some added texture.
I usually "spice" with MSG, parsley, and maybe some paprika for the beans (plus the usual (light) salt & pepper).
Toss it on a plate, in a bowl, mix it up, whatever, then serve and enjoy.

It's super easy, costs fuck-all, and fills you up pretty well. I'll sometimes add a fried egg or two since the yolk gives it a nice bit of texture and more flavor.
Hot sauce on-hand to dash with (if that's your thing, could also do soy sauce) and you've got a perfect meal every time.

Quick Black Beans and Rice Recipe
By Three Guys From Miami


Prep time: 15 minutes
Cook time: 20 minutes
Total time: 35 minutes
Yield: 12 servings

The express train to beautiful black beans and rice in a quick and easy recipe!


INGREDIENTS:

1 large onion
1 large green pepper
3 cloves garlic, peeled, crushed, and chopped
3 tablespoons mojo criollo sauce or 3 tablespoons vinegar
Olive oil for frying
3 (16-ounce) cans plain, unseasoned black beans
1 bay leaf
3 teaspoons ground cumin (more or less to taste)
Salt and pepper to taste
Make a sofrito by chopping onion and green pepper. Sauté onions and green pepper in olive oil until onions are translucent.

Add crushed and chopped garlic and sauté another minute or so. Take about one cup of beans and mash them to make a chunky paste.

Add this paste, the canned beans and the sofrito to a sauce pan. Add bay leaf and let simmer on low heat for about 20 minutes.

Add cumin and salt and pepper to taste. Remove bay leaf. Serve over rice.

My recipe for pinto beans

>soak dried pintos for recommended amount
