There was a time when it might be true, range fed cattle could inadvertently eat things that contain parasites. Cattle will eat almost anything in their path (look up hardware sickness). cattle eating near a contaminated stream or being fed contaminated food might get parasites.

modern cattle farms feed cattle grains that have been pasteurized and are not allowed to roam around where they might get parasites, the same reason why modern pork can be cooked medium rare because the pigs feed is controlled instead of letting them roam around and eat anything they want.

Europeans overcook everything in my experience. I think it comes from centuries of sending all of the good quality ingredients to the local lord and needing to cook the shit out of what was left to kill the bugs. They've never gotten over that mentality, and thus >>16591275

Even a rare steak is cooked to an internal temperature high enough to kill any bacteria or parasites within. Plus, if you eat meat from healthy pasture-raised cows the likelihood of any sort of bacteria or parasites being in there in the first place is almost negligible. It's the factory cows that get the most sick and spread the most diseases between each other.
