Made some coconut cheesecake from scratch. No recipe.

Came out pretty damn great.

Yep, it's just like i'd imagine any cheesecake crust would taste in terms of texture.

For the coconut taste i threw in two packs of creamcheese, half a can of coconut milk, some brown sugar, and a tablespoon of agar agar. cooked the mix for about two minutes so the agar agar could bind and then poured the batter into the half baked pie crust.

It was really fucking simple.

The base:
1.Random flour, like half a pack, i think i even used this bread mix, didn't complain about the taste lol.
2. Used 1/3rd stick of butter, melted in the microwave
3. Generously poured some brown sugar in the mix.
4. Knead until it's a proper base, pro tip: takes like 30 seconds.
5. Spread as evenly as possible into any kind of tin and bake for 15m or so.

The cheese part:

We're gonna cook this a bit so put everything in a large enough sauce pan.

1. two packs of cream cheese
2. half a can of coconut milk
3. a dash of brown sugar
4. a whole tablespoon of agar agar

Cook for two minutes and stir thoroughly with a whisk while cooking.

Now pour the batter into the half baked base and cook for another...eh fuck it, just bake the pie until it's browning like in OP pic.

Definitely gonna give this project another shot. The agar-agar and coconut milk can reduce the amount of cream cheese used by a lot i think. Might want to experiment with syrup flavours too like blueberry.

I hope people will enjoy this humble recipe and cook as carelessly as i cook, as there is no greater joy in the kitchen than experimenting.
