Ex-waiter here. I was a pretty good kid when I got into the industry. The problem is that the work is a socially and physically draining dead end job. No matter how much you enjoy the people you work with you will hate dealing with them and your customers day after day. Turn over rates are high, but the issue is really the waiters that stick around for 5+ years. They are so jaded and cynical from the mundane cycle. You either let it suck the life out of you or join in with them. I started going out drinking with these people every night which caused me to pick up an awful drinking habit and got into using drugs with them too. It took me a long time to straighten myself out, but when I did none of the workers liked me any more because I was trying to better myself while they were left in their cycle of shit. Luckily the memeflu shut down my restaurant for a little while which gave me a good excuse to leave the industry for ever.

TLDR; yes, the job is open for anyone, but the real problem is what this mundane, draining job does turns those into who stick around.

It's very hard to do foodservice work without turning into a degenerate. You work basically the opposite hours of polite society, in a hectic environment with a bunch of people who have problems, to put it mildly. however, i don't think the cooks/chefs are 'pretending' they are younger than they are always. the chefs and cooks i met, from late 20's to early 50's - they were always in comparably much better physical health than most normies at desk jobs. no back problems, no mobility issues, spring in their step, able to wake up early and sleep late. yeah, sometimes the things they wore might be a bit out of place, but they were often pretty fit - an occupational necessity.
