tortillas or indian flat bread
Both are pmuch same:
>combine warm water and flour, usually 50% hydration
>add tablespoon of sesame oil for indian bread, heaped spoon of lard for tortilla
>pinch of salt for both
>mix together and knead or instead of kneading just let it sit for at least an hour
>roll into sheets and cook on hot pan
