Are baking stones worth it? I bake pizzas pretty often with the iron pan method.
Do they stink or make smoke? And I'm afraid it'll just crack after a few uses.
Should I get a baking steel instead or stick to the pan? Any stone recommendations?

I have a cheap stone and havent had any issues, definitely get a better crust than a pan but i'd say to get a thick steel over a stone.

The ones that are sold as baking stones fucking suck. Go to a stone cutting place like the kind that make headstones and ask for an inch thick slab of granite.

How does a screen help with the crispy crust? My broiler only goes up to 550. Also isn't that gonna bend after a few uses?

At pizzerias, it lets the crust dry out as it cools down. Otherwise it can get soggy.

Just get a baking steel, it does everything a baking stone does but 5 times better. I have one.

A screen allows for moisture to escape off the bottom of a pizza. It's much easier to get a brown crust that way. Baking stones are a meme and a pain in the ass, get yourself a screen it's less hassle and makes a crispier 'za.

I wish my own pizza stone was square, because I like to buy those 2 packs of flat breads from Aldi or Brooklyn brand...and they really do make a better crust than my metal pans.
They're not hard to take care of...sometimes I just scrape them the next day, and minimal wash up. I do not store it in the oven, but I think you could.

Chef John's method of doing 5 minutes with a normal sheet pan on the bottom of the oven, then 5 minutes in the center, has gotten me plenty of good pizza crust. I also use cornmeal. Made me regret buying a pizza stone, and later a steel.

It's heavy as fuck and it's still very hot the next day after using it.

Do you need to pair a pizza screen with a stone, or is it enough on its own? What about muh heated surface?
