Beans for stove roasting

Only done the Nayarita so far, came out pretty good with a very light roast. With the decaf I want to see if I can get it any lighter than the typical dark, oily decaf.

Not a huge fan of decaf but after a year long break from coffee the caffeine now cranks my anxiety through the roof.

I was just about to ask the same thing, what a coincidence. I prefer tea in general, and dislike the troublesome process and costs of preparing coffee. However, I rather like the flavor and effect of ingesting just a few coffee beans. I only had maybe three or four earlier, but I mashed them well in my mouth, and kept them under my tongue for a while for sublingual absorption. The effects seem decent, and the convenience is difficult to match. I don't keep a bag out, but I have a small tea cup with a few beans I'm snacking on very periodically right now. If you absolutely had to use a "pan and stove" setup, the hive basically eliminates all of that. Think of it like higher tech jiffy pop. in terms of brew method it really depends on what your morning is like and what youre willing to do. Some easy methods are french press or just a regular coffee machine, more complicated methods would be aeropress or pour over, look into how you would brew using these methods and decide which fits your lifestyle best. Every method will give you different results but really anything will be better than shooting lukewarm water through stale beans in a hot plastic container.

Like the other anon already said fresh beans and a good grinder are most important, a good grinder allows you to grind the beans to similar size particles so you can get an even extraction. This is way more important than the machine you use to brew. Some good "entry level" grinders are the baratza encore and the wilfa svart I would highly recommend spending the extra money to get one of these grinders compared to cheaper electric grinders, its no joke that the most important part of your setup is the grinder.

If youre looking for something cheaper than those grinders you can go with a manual grinder if you dont think you'll mind doing that every morning but if you do go with a cheap electric grinder make sure its at least a burr grinder.

In terms of beans freshly roasted are best, personally I go to a local roaster and buy the beans there but there are many online retailers who will ship you freshly roasted beans. Most specialty coffee is roasted much more lightly than what you would find in a keurig so I'd say start with a medium roast and see if you like that. If you're interested in learning more and getting into specialty coffee get the chance to you should really visit a specialty coffee shop and try whatever they have on pour over. If you've never tried coffee like that it will probably change the way you see coffee. Most people dont realize that coffee when prepared correctly can have an incredible range of tasting notes you'll discover a ton of tastes you wouldn't believe

I bought a second hand Gaggia Classic today, looks like the group head has a lot of scale underneath the group screen. Group gasket doesn't look terrible though?
I plan to try and descale (and maybe 0000 steel wool) and clean up all of this tomorrow and descale the boiler insides. I can only assume it's just as bad inside of it.

I pulled the insides of the machine apart and took the boiler apart. Pretty manky inside.
Cleaned up okay, the group head part I am happy with but the boiler part still needs to be ground flat on the mating surface as there is some tough scale and pitting that has made the surface uneven.

You can just make out in the deepest visible part of the boiler that there is still beige scale build up in the inside of the boiler.

I did 2x citric acid for 30 minutes each time and it's hardly made a dent, What's the next step of upping the descaling solution?

If you french press or filter, not that much. You grind so coarse the hario does a great job anyways

For espresso, one knob was the difference between a shot that takes a minute to come out and a shot that takes 20 seconds, neither tasted good.

I'd say get an espresso maker before upgrading. I got pic related, it didn't really make sense buying a 300$ grinder without a 300$ espressso maker

The grinder is, after the bean itself, the most important factor in making a quality cup of coffee. This anon >>16590501 is talking shut out of their mouth. A shitty Hario grinder will definitely make every cup you make worse simply by not being very consistent. If you're making a French press, for example, the shitty grinder will provide fines that will not get filtered through the plunger and will end up on your cup. If you're making filter coffee, this inconsistency will fuck up with your extraction and make your cups from one morning to the next rather inconsistent.
Get a good grinder as soon as possible, even if you're making espresso.

Grinders produce a range of particle sizes dependent on where you've set the burrs. Harios will give you massive boulders as well as tiny tiny fines for any setting. You can regrind the boulders, but you'll end up with more fines. You could sift the fines, but why bother. Just get a better grinder.

I started out with the harbor grinder too. Upgrading to a grinder in the 100-200 range gave a very noticeable improvement in flavor clarity. I would say for anyone who knows they want to get into coffee don't even bother with a sub $100 grinder.
