in most countries it was understood that noodles need rich, flavourful sauces to taste any good so why did italians fail to understand this? their food is just noodles, bland tomato sauce and dull, unhealthy cheese

Italian food is simple and therefore needs extremely good quality ingredients to stand out. It doesn't matter about the provenance of the recipe if the ingredients aren't to scratch. I've had simple tomato based sauces on pasta and it's tasted fantasic and other times flat. The key difference was the quality of the ingredients.
