How does /ck/ like to make theirs?

I don't make it a complicated affair. It's a quick dinner, like spaghetti for when I just want something quick with a bunch of leftovers for later. Brown ground beef (or turkey, works quite well actually) along with some diced onions. Add in canned Red Kidney Beans and Heinz chili sauce. Simmer and mix together.

Pour one bowl, and the rest goes in a plastic gladware for left overs later.

While still hot sprinkle some mexican blend shredded cheese over.

If I had my druthers? Growing lamb,beef, and pork. Chili base made from dried guajillo and New Mexico peppers. Onion, garlic, diced tomato, jalapeno. Serve with cheese, sour cream, and hot sauce to taste.
However, my wife hates the more traditional style of chili. She likes ground beef only. Plenty of tomato, plenty of beans.

Can of Armour Chili with beans, with saltines and tabasco. If I have cheesewheel brie, I'll also cut a few blocks and mix/melt it in - really beats shredded cheddar.
I've made chili at least ~40 times in my life with different recipes, but I've never liked them more than a can of Armour even if it others like it and and take some home without asking. Probably has more to do with not caring for chili that much as compared to other bean/meat soups and stews. On the other hand, canned chili shines in comparison to most other canned soups, so it makes a good drunk/lack of fucks meal.

I've done it with leftover pork butt. It was delicious. But, I don't feel like smoking a butt for 8-10 hrs, or sticking a roast in a crock pot for 5-6 hours before I make my chili. If I have it leftover? Absolutely.

Chili is a tex-mex food. Chile con carne. Chiles with meat. They didn't use beans when it originated. I'm not completely opposed to beans. But, they are completely unnecessary for a great chili. I don't see how you could even call it chili without meat.

I've had chili made by people who won competitions for it, and from experience the more "real" the chili is the more I generally dislike it. For example, I generally loathe chili that has a notable taste of cumin, so I get a better tasting dish, personally, by not including it. In the same vein I don't prefer the meat.

So yeah, it's fake, but it tastes better to me, so I guess it being real is a downgrade in my experience.

Toss in an onion and garlic into a pot.
If I got a bell peper I'll throw in this as well.
Throw in about 500-1000g of lean beef and let it brown.
Will now put in about 1 tablespoon of sugar, 2-3 table spoons of cumin, 1 table spoon of Smokey paprika, and about 1 table spoon of chili powder. Can also use a bit of onion powder and garlic powder if you want but normally idc.
Mix it up a bit and then put in a big spoon on tomato paste, (Big tin) 400g of crushed tomatoes and as an opion which I enjoy 200g (Small tin) of kidney beans. Sometimes I'll use 2 tins of kidney beans. Good shit.
Add in about 2 cups of beef stock and let it simmer for about 30-40 mins stirring it occasionally.

Eat with rice, corn chips, whatever you want.

For whatever reason, I always forget that ground beef in chili is even an option. I usually crock pot my chili with chunks of beef that I gave a quick sear. It ends up pretty good.

My dog never begged for food until a friend came over and gave him human food. Until then he only knew his food and was content. I toss browned beef, whatever beans I have sitting around, diced tomatoes, diced onion, whole skinless tomatoes, bell pepper, parprika, chili powder, cumin. Sometimes corn if it's harvest season, sometimes different ground meat like turkey. I do not measure, I just eyeball the shit.
