Why do restaurants in landlocked flyovers insist on doing seafood? Some even go to the trouble of overnighting it so it's at least good, but why not just use freshwater fish? I live in Billings, Montana and it's appalling to me how few restaurants here do anything with trout, or any of the other freshwater fish around here? This whole state is known for fishing and hunting, tons of places sell all kinds of game meat, but when it comes to fish you're mostly going to see tuna and salmon and shit.

Someone convince me why salmon isn't overrated trash? Every time I've had it homemade either by myself or another it's always either dry or undercooked whether it's grilled baked or sauteed. Every time I get it at a restaurant it's dry. White fish are better every time.

northern MNfag here, almost any good restaurant here does freshwater fish. I don't know what to tell you but around here walleye is king, oftent you can find sunnie's, bass, and northern pike before you get salmon. the big exception is chains and places that cater to city fucks, then your going to find generic ass shit just like anywhere else.
