Look into whole foods, eat things that aren't processed. And depending on what your goals are there are some differences. But dark leafy greens and colorful vegetables are a good place to start. Boil your meat if possible, no fried food, watch what oil you use.

Hit up the produce aisle when you go grocery shopping, buy less prepared/processed stuff. That's how I started eating better. As for salads, try making your own dressings, or just using olive oil + lemon juice. Making croutons is super easy too, you basically just toss some bread cubes into a mix of melted butter and herbs and bake em in the oven for a few minutes.

buy bags of prewashed spinach. baby-spin good for beginners. lettuces are low-nutrition filler, at least icebergs. romaine is good. learn to chop spinach and dice a tomato (both ezpz) and get a big bowl or lidded-container to toss it in. those two ingredients + sprinkle of parmesan is an italian sidesalad for me +/ seasonings, oliveoil-viniagrette.
I never liked creamy dressings, so italian greek or sundried tomato if it's bottles. I like matchstick-carrots and diced bellpeppers (all colors). people who eat salads for real get slick as hell with this shit. also, you need fats. cheeses, nuts of all kinds for topping and seeds (like sunflower or flax/chia in your dressing) are nutritionful sources of fat in addition to your dressing's oil. Fat fills you up and absorbs so many fat-soluble nutrients from the veg, it's necessary. Bags of prewashed greens are my favorite, iron-and-protein-rich spinach is a staple in my house. I like the Tricolor Slaw bags too, chopped cabbage w/ carrot shreds. you can utilize beans in places too. you're building a meal.
for croutons, use anything you like. cheeze-its, chex-mix, gardetto's, popcorn, I don't know. Whatever's your favorite.

a signature of mine is hot-baconfat-dressing where I bake bacon pieces to go with the salad, strain off the fat and blend it with some rice vinegar, hella seasonings especially pepper, a squeeze of mustard (not yellow) or mayo to help it emulsify. that's what the salad gets tossed in. it's awesome. get creative. On working days in the summer I have a hearty breakfast with coffee or iced tea, and like to have a light midday meal that never weighs me down but fills my stomach with good nutrition that will "burn off" clean through the day and leave me ready for a good dinner when I get home.

He's amazing, but I wouldn't say he was entry level or comprehensive, for someone "getting into salads" might be a big challenge.

Going back in time, the Moosewood cookbook is like early farm to table and vegetarian. Alice Waters was a slow food movement pioneer and has a whole cookbook on vegetables and simple pantry meals.

Myself, OP, I just recreate salads I once enjoyed in a restaurant. Make a perfect Caesar, blacken up some chicken breast, make your own croutons, grate your own parm. This can be you taking inspiration from that visit to Cheesecake Factory and getting the beet-goat cheese appetizer salad, or going to the argentinean churrascaria, and thinking damn I should use more hearts of palm and mustard vinaigrette more often, and it goes so well with blood oranges and red onion. Maybe you just get a hankering for caprese salad or greek salad, or cobb. You just get the ingredients and make it. I remember falling in love with green goddess dressing that was homemade at this place I went as a kid, and the El Torito pepita version. Melting Pot used to have great raw mushroom salad.
