I like to do a head of cabbage, two potatoes, quarter of an onion, and a 14oz kielbasa.
A little bit of vinegar and chicken broth, 2tbsp of butter, salt and pepper, and some crushed red pepper

It's not amazing or anything but I like it

Redbeans and rice - I don't really have a specific recipe off the top of my head, but you can use dry beans and get a great texture without having to soak them for 24 hours. Ditto with cilantro/lime black beans.
If it's soup weather where you're at, you cant go wrong with the whole chicken for about an hour with lemons and whatever herbs you like, strained and use the stock as a chicken soup base.

Very simple things, but really I think that's what the IP is best at.

Boom, sear some chicken breasts or thight on the high heat, once both sides are seared, add about 3 cups of chicken stock and some spices. I usually stick with tumeric, cumin, and bay, but you do you. Pressure cook for 10 mins.

Quick release, remove chicken, add a cup of split yellow peas or red lentils, as well as any additional spices or, if you want, vegetables. Pressure cook for 12 mins.

While that's cooking, shred the chicken. When the pressure cook is done, readd chicken.

Depending on the legume used, this will be a soup or a stew. Can be eaten on it's own or over rice.
