I've tried it before but I didn't like it. Gotta say though, my "recipe" (read: randomly improvised shit) could be completely different from yours.

Generally speaking I dislike mixing fried eggs with most stuff, maybe except potatoes or pepperoni. But that might be just me.

I've been eating it for breakfast probably 3-4x a week ever since I've discovered it. Adding a cornstarch slurry and some soy sauce is how I do it.

Add some shaoxing wine to the eggs when you're beating them and it makes it a lot better. I also add ketchup to the cornstarch slurry, it's not traditional but it improves the dish

sadly, i'm in amerifatland and still have 2 and a half years before i could get such wine on my own, but if I could find out how to get it, i'd try. Personally, I don't think a starch slurry is neccessary. My method is to cut up the tomatoes, sprinkle some sugar and salt on the tomatoes and let them marinate for a bit. For the eggs, i whisk them into submmission and add a bit of water and salt. I use a decent amount of oil and get the pan piping how before adding them in, cooking them kind of in layers, as soon as the bottom coagulates pull the pan from the heat and scrap it to the side, letting the uncooked egg go into the pan and get cooked, doing this a few time until thoroughly cooked. I find this way the egg is fully cooked but it stays soft and moist and perfect with the sauce. set the eggs aside and add the tomatoes, I like to cook them so there is still a little bit of texture but not to the point of super saucy. I add soy sauce, rice vinegar, sometimes fish sauce, maybe more sugar/honey, sometimes hot sauce to the point everything tastes right, add the eggs and turn the heat to low and let the eggs marinate for a couple minutes. Turn off the heat, drizzle some sesame oil, add scallions, and serve over rice or noodles. Some bok choy is nice sometimes if you want extra greens. Sometimes, just doing the tomatoes the same way, it's nice with tofu instead of eggs as well.
