Rhubarb requires tons of sugar to offset the oxalic acid, back in the day, people used it as a way to show off how much of an expensive, at the time, ingredient they could afford to piss away.

That's a shame. Russians can really bake.
The Finnish lihapiirakka is most likely a derivative of the Russian pirozhki. The dough is different and pirozhki can have a variety of fillings where as the lihapiirakka filling is always just meat and rice, but over all they're very similar.

Am I not allowed to use my native language? Why is it okay to say "pirozhki", which literally means "little pie", but not "lihapiirakka"? I know the literal translation is meat pie, but it's a unique food that differs from most people's idea of a meat pie. Saying "lihapiirakka" just guarantees others know what you're talking about.

I make pies as a small part time job

Lately I've been experimenting and I've made a combination pie of some of my favorite flavors. It's essentially a coconut cream pie given a coffee flavor with espresso powder, with toasted macadamias bits and rum mixed in.

The picture doesn't do it justice. It's a previous attempt and I've been trying to improve the appearance and texture by toasting the coconut more. However it tastes wonderful

Key lime is a top-tier pie. Other dessert pies are relatively dull in comparison.

I also enjoy steak and ale pie, or guinness and beef pot pie, with a puff pastry top. Other savory pies can be nice too, but nothing beats the beef, pie, and gravy combo.
