Why do some sardine brands taste so fishy while other brands are more mild and palatable?
I bought a case of King Oscar sardines but the flavor is so strong in an unpleasant way, I can't eat them without adding tomato sauce first. Other brands like Wild Planet or Bela taste fine.

Grocery stores don't even sell actual real olive oil, what makes you think they're putting good quality olive oil in your deenz? Get sardines in water. Canned sardines are usually put in low-quality oil that probably isn't even real olive oil and have toxic chemicals in them. Or you can stop being a dainty female and ditch the canned shit, get good quality Haddock or Cod from a fishmonger.

While there are fish known as sardines (Sardina pilchardus, also known as pilchard), "sardines" is internationally used as a class of canned fish that encompasses a number of different related species (all mostly under the family Clupeidae). Pic related is the WHO Codex standard for which types of fish can be packaged and sold as "sardines".

For reference, King Oscar "sardines" are brisling sprats. Brunswick "sardines" are juvenile atlantic herring. Those dirt cheap "sardines" you sometimes see at discount stores are usually Indian oil sardines (Sardinella instead of Sardina). Anchovies (Anchiota engraulis) are even considered "sardines".

As such, you'll often find noticeable differences between different brands of "sardines". Do some research and find out which particular fish you actually like.

The hot sauce that they come in typically isn't hot or acidic enough. I break the spines and mash them up on the bread and then add hot sauce. Good on toast the same way. No need to heat the fish. I sometimes add tomatoes, mayonnaise, black pepper, etc. for more varied texture and flavour.

What people refer to as a 'fishy' taste or smell is really an 'off' taste or smell. It's usually a result of poor freshness or suboptimal storage. Even if you can tolerate it to an extent, it's not a good sign with respect to the quality or safety of what you're eating.

Case in point, sashimi doesn't have the unpleasant taste or smell despite being pure fish because it has to be very fresh to be acceptably safe to eat. Maybe you could find off sashimi if you ate at a Chinese or Korean 'sushi' place since they have low standards and know that reputational damage will mostly affect Japanese and not them.
