- couldn't remember if ther was a deenz or tinned fish general or whatever
I made sardine pancakes
fry your deenz either in the oil it came with or butter, also parsley and a touch of brown sugar helps blacken it
use the leftover huile de sardine to make a duxelle, add some mustard or chilli or w/e at this point if you are a spicy boy
make normal thick pancake batter and start cooking two deencake sized pancakes
put one of your blackened deenz into one of the (currently raw) deencakes
add some duxelle either side of the sardine to help with structure
once both the 'cakes are starting to brown on the bottom and you can see some bubbling on the non-sardine pancake you can sandwich the two
i recommend putting the sardine'd one on top
at this point you can squeeze it down with a spatule
put a lid on top, and optionally you can add some drops of water around the edge to help steam it so the middle batter can cook more quickly so the outside stays a nice brown instead of going black
when the middle batter is cooked it is ready to serve

99% of the time they just taste like salt. Sardines can vary as well, but I like the big suckers in spicy tomato sauce like Nuri the most so far. Like a soft herring filet.
