I fry/cook it in olive oil, diced, until its soft if not outright mushy. Its kinda plebeian but it adds a lot of flavor to certain dishes, casseroles especially.

I love eggplant all kinds of ways. Roasted, smoked, whole and then blended for baba ghanoush or caponata. Sliced and sprinkled with salt, olive oil, maybe some balsamic and grilled outside til soft and tender, or baked on a sheet pan til golden brown on both sides. 3 step breaded for parmiagiana. I like to peel it and, then cube it for japanese stir fries, or slow simmering in a curry sauce like jafrezi in a curry chicken dinner (such as a Sharwood's simmer sauce). It's great in Thai dishes that use coconut milk.

If you don't like it, probably someone made it wrong. Some recipes need peeling, some don't. I have had some poorly cooked eggplant in many Italian restaurants, spongey undercooked eggplant as you bite into a sub, pizzas topped with wtfbreaded, uncooked dry egglant, and the other end of the spectrum, people who pan fried oil logged eggplant. Need to know what you're doing, same as mushrooms with that ability to absorb oils.

Zucchini is just not the same to me. There's too much moisture in zucchini, and though zucchini's twin is crookneck squash, I would NOT consider egglant interchangable nor related to zucchini for recipes.

I love eggplant is all forms although I usually prefer the long Asian eggplants and small round Indians ones. If I'm making eggplant rollatini or parm I use the big Italian boys. I just let them sit for a bit with salt before cooking to draw out any bitterness. I have found that many people who don't like eggplant really just dislike the texture. Same thing with mushrooms.
