I'm pretty sure the way it looks visually is entirely based on the skill of the baker and not sue to any sort of recipe.

For that dense store bought style of sandwich bread, the recipe name will be a pullman loaf. It is desired for finger sandwiches. The crusts will indeed be cut off.
There's a pretty specialized loaf pan for it, that has a sliding lid to brown the top as evenly as the sides. The closest thing in the US, is the imported Caribbean bread called hard dough. A hard dough loaf weighs a literal ton when you pick it up and it's pretty soft and nice, actually. Look for a Jamaican store.

steam in the oven, but i dont know how to make such clean cuts for that nice slashed look, even using a shaving razor the dough just gets pulled and looks stupid so idk
