Depends on the sauce for what type. For dried pasta anything that's from Italy and made with bronze dies, the texture for it is just better. The sauce clings better, etc. I'm not loyal to a particular brand. But I often buy Martelli if it's available.

I don't have a favorite, but I trust, in general, the dried DeCecco and Barilla for good thicker noodles that have the right firmness in al dente situations. I pick up imports of other brands and just as happy. I also like fresh pasta from time to time, and store brand egg noodles.

No favorite brand, but Cecco is fine, Barilla is meh but since I graduated I never buy this brand anymore. Optimally, my friend makes me the pasta, he's great at getting the ratios just right, sometimes I make the pasta but not the advance shapes like conchigliette or sacchetoni.

Depends on where it's sold. Certain countries have a legal definition for organic on packaging. If it's English & French on the package it's probably in Canada (they have Williams & Sonoma stores there as well). So maybe it qualifies as organic in the US but they discovered after printing they had to remove it in Canada.
