i treat it like bacon or sausage and enjoy it with a runny poached egg on an english muffin or toast with butter. you just need a couple slices about 1/4 inch or thinner fried in olive oil until your preferred done-ness desu.

They tatse different and normal onion has more of that oniony umpf. green onion though doesn't need as much heat to bring out the flavours. You can do both and keep the normal onions crunchy for the texture.
