absolutely and unfathomably based, finnish cuisine is just bland, watery and mushy shit eaten by super poor people back in the day when no one could afford to actually roast their food. another good example of finnish cuisine is merimiespihvi, on the surface it looks deceptively good since the surface tends to be well browned. but underneath that is watery stock filled to the brim with disgusting potato slices that are mushy on the surface and raw on the inside, not to forget the pathetically small pieces of tough and bland meat sprinkled around the disgusting concoction. whereas western europeans were able to do some really good and creative shit with the ingredients they got from their colonies finns were being bucked by the swedes and russians at the same time. funnily enough some of the best meals in the finnish home kitchen tend to be from aboard.

I'd say that in order to appreciate finnish food you have to understand why it's the way it is. Prior to the late 1950's there was a near constant lack of resources and starvation wasn't uncommon.
Even when people finally got food on the table choices were limited due to the local climate being unsuitable for growing almost anything. And since noone wants to trade with a poor country with nothing to give there's the lack of spices as well.

Rye malt pudding. Commercial mämmi uses molasses instead of rye malt to sweeten it, but it doesn't taste the same. This recipe is pretty gud but using powdered seville orange zest instead of chopped orange rind adds a more balanced flavor.

Serve it with cream and a sprinkle of sugar on top. Very satisfying.

There is none.

I had a Finnish roommate for a few months awhile back, and he tired to get me to eat his sad, undercooked potato casserole thing that was smothered in what tasted like cold horseradish but much more bitter. I told him it was one of the saddest things I've ever had the displeasure of eating and ordered us some Portillo's just to get the taste out of my mouth.

I'm also convinced that Finns and other people from the Nordic countries just don't have many working taste buds because they chew tobacco and put dip pouches in their mouths 24/7.
