I'll never attend an unmanned buffet station again in my life...thank you pandemics...
But, at a Chinese buffet, in an ideal world, the first course/first visit is such:
1. a small little cup of soup:
1/2 egg drop and 1/2 won ton as a combo, or hot in sour, per my mood that day. I might ladle down from the bottom of the pot to get more mushrooms or stuffed noodles. I'll hit up the green onion and crunchy noodle toppings area for the soup.
2. medium plate of appetizers on plate that also have all my condiments loaded up for the meal. So, hot chinese mustard, and dollop of chil paste in oil, and a small bowl of pot sticker soy sauce dip, which I doctor up with toppings and chilies. I want a couple pot stickers if high quality, an egg roll, a spring roll, a sticky sparerib, crab rangoon, tempura veggies or sushi, and some amount of steamed edamame. This app plate is shared for the whole table so might have some duck sauce or another offered condiment, too. Sometimes there might be good dim sum favorites like shu-mai.
Sometimes there can be some excellent chicken wings. Local place near me used to top them in garlic-cilantro crunchy topping, or a sprinkle of lime juice and salt-pepper blend.
