reverse sear
cook them in the oven until they've reached the desired internal temp, then sear them quickly in a VERY hot pan then let them rest
you should get a batch of properly cooked steaks with a good sear easily

Instead of cutting them into individual steaks, cook them as a roast

just throw them in the oven and cook them well, you dont want to serve others raw meat so bake them low temp for three, four hours

if you do a reverse sear, you run the risk of either overcooking the steaks still in the oven (to keep at temp), or you rush and overcrowd the pan and risk getting a mediocre sear


if you 'vide them, you wont have to rush to sear the steaks
