there's so many types of scrambled eggs I feel like they should have different names
My favorite is when you beat the eggs in a bowl, put some olive oil in a non-stick and right when it's about to smoke, dump the eggs in and scramble for 5-10 seconds or so. They taste just a little fried, but still taste like egg.

I go through phases and don't eat them the same way all the time. I make them sometimes like you describe, although I use clarified butter instead of olive oil. I like them that way if I just want to eat them plain or with cheese and vegetables. I like the soft french style if I want to spread it on some crispy toast and don't want cheese on them, they're great when made with a little extra butter. And American style is good for egg sandwiches or hearty omelettes. They're really versatile and if you limit yourself to one preparation I think you're missing out.

My main experience with american scrambled eggs is from when my family went to disneyland a few times. Burnt usually. How do I stop it from sticking to the bottom? I've seen people say you take it on and off the heat while stirring, and I've seen others say you get the pan really hot and cook them in a few seconds. I've tried both loads of times but I always lose half the eggs on the bottom of the pan and it tastes metallic. I've just resorted to making them in the microwave now.

"Really hot" for eggs should only be like medium temp, and you have to constantly stir them from the time they go in the pan until they come out. You don't really have to do that on and off the heat thing, that was just kind of a gimmick from a Gordon Ramsay video.

If you're using a nonstick pan, then you just need to melt some butter and let it heat up a bit before adding the eggs. If you're already using butter then you need a better pan.

First time I knowingly ate powdered eggs was during a training exercise back when I was in the military. I had an early morning watch so I helped the cook make eggs for breakfast. He just pulled out a giant bag with egg powder, added water, and we shook the crap out of it. Forgot how he cooked him but I am pretty sure he just dumped it in hot water like a sous vide bag.

The great thing about powdered eggs is that it is hard to over cook them. The bad thing about em is that they vaguely taste like egg. No idea how anyone could prefer powdered eggs over the real thing. Then again I prefer fake maple syrup over real maple syrup.

Microwaved eggs aren't bad. They have a much more "airy" and light texture to them: less firm. What I do is microwave for 30 seconds at a time, stirring between each nuke. Takes about a minute and a half. Nice for really quick eggs when you can't be bother to wait for a pan to preheat, or don't want to wash more than a bowl.
