Lean cuts are best – top or bottom round. Get yourself a dehydrator for around $100, salt and pepper them and whatever else you might want on them

If you're going to eat it within a few days you don't have to use any nitrates or other curing agents. I like this because store-bought makes me feel like shit.
Just cut strips (across the grain) of the leanest cut you can find.
Salt and pepper.
Dehydrate it. (If your oven works with the door open you can do that) I used to just tape down the switch on mine until I bought an actual dehydrator.
The fun of it is changing things, trying new things, experiment with it. I like a little paprika.
