A burger chain can make their patties fractionally smaller or thinner at any time without adding an extra step to the processing and it would be less noticeable than punching holes.
Since the patties are cooked in part by steam coming up beneath them I think the holes probably make more of a difference than the 5 second figure you pulled out of your ass. But even 5 seconds is significant when you're taking orders every minute
