Why do so many recipes just use 1 bay leaf, none really ever tell you to use a lot.

I like to make braised chicken thighs with onion, pickled sea fennel, white wine vinegar, and ground coriander, then throw in about 5 bay leaves white it simmers for an hour.

It tastes really good.
