Taste is rather mild and similar to other muscle steaks. Personally I like to start by cutting through the “wall” on one side, and then carefully butterfly it so it will lay flat like a steak. Then give it a little oil and seasoning/marinade, grill hot to medium rare and eat it on a sandwich like a burger basically

Liver - cut it in thin steaks fry then with butter till sealed then place the steaks on a sheet put slices of apple on top them and cover with a slice of cheese. Put tem in the oven for about five minutes.

Heart - the best way to make heart is bbq. Cut it in steaks, season only with kosher salt, when done eat it soon, don't let the steaks cool down or they will turn chewy.

Taste is obviously subjevtive, but I would imagine that the easiest offal food to like would be liver. Try it pan-fried with some onion, some oven baked potato wedges, and a nice salad. Also try it as a paté. For paté, the best liver to use, to my taste, is either pork or duck. Creamy kidney stew is also great, just make sure to remove the membrane parts, soak the kidney in water or milk for an hour ish, and flash boil your kidney/s once for about 1 minute and drain all the water before cutting up into smaller pieces:

Ingredients
300-350g of prepared kidney, sliced into roughly 2cm long, 2cm wide, and one centimeter thick slices.
1/2 large onion or 4 shallots, finely chopped.
150g of button mushroom, thinly sliced.
25g salted butter
4dl of heavy cream
3 tablespoons of a light type of cognac/armagnac/brandy (alternatively dry sherry, but the taste will be different)
2 teaspoons of all purpose flour.
For seasoning: Rosé pepper, Salt, and (optional) a sprinkling of ground nutmeg.

0. Take out the cream and measure it and leave it out so it warms up to roomish temperature.
1. Sweat the mushroom in a pan with a little salt, then remove from the pan and set aside for now.
2. Add butter into the pan, and start cooking your onion/shallots on medium for about 6-7 minutes until sweet and transluscent.
3. Add your sliced kidney to the pan, cook on medium for 2 ish minutes, occasionally stirring, then reduce to low heat and cook for another 2 ish minutes.
4. Increase heat to high, but not quite.maximum, and deglaze with brandy/cognac/whatevs, once the alchohol is pretty reduced, return mushroom to the pan, sift the flour over your pan/pot and stir a little. Then, reduce the heat to medium and add the cream and an amount of crushed rosé pepper you like. Let pitter patter in the pan/pot/saucier until thickened to the appropriate viscosity. Season to taste.

Serve with warm, sticky rice or potato wedges. A side sallad with an acidic vinegraitte goes well with this.

Well, if you're talking about beef heart, some prep work is needed. You need to cut away a decent amount of fat, get rid of the hard parts, and then you can start cooking it.

The taste is like a lean piece of meat, but can be a bit chewy. Kebabs/skewers are great ways of enjoying heart, making it into susage is also nice together with some other, fattier cut. Some people really enjoy beef heart as a cheap sort of steak, but it's definitely not as tender as the cuts traditionally used for most steaks.

I like intestines, tripe, liver, heart(very similar ~regular~ meat as it's just a muscle), kidneys, and spleen.
I do not like lungs.
I will never try brain and I am unlikely to ever try balls.

Serve as a creamy soup with morels or cep mushroom.
Americans like to deep-fry sweetbreads and it's also pretty tasty, just realize that you put in quite the effort with sweetbreads with the cleaning process because of the membrane. Worth it, still, in my opinion. Most butchers' counters at grocery stores where I live only sell them if you order them ahead of time, but it's not very costly.
