What's a simple, healthy meal I could make for dinner tonight that's heavy on vegetables?

I've been eating like absolute garbage recently and would like to change that. I'm talking college student level bullshit like pizza 3x a week and ramen and other shit.

you shouldn't need to eat dinner. I never eat dinner. my last meal wraps up around 11am.
I eat beans in a tomato sauce, with bread.

Raw chickpeas covered in pesto with lemon juice and maybe some feta cheese on top. Pretty low effort and tastes good.

You can roast pretty much any hard vegetable like turnips, carrots, so on and so forth in the oven and they end up miles better than boiled. You could use soy sauce and honey to make them taste better, but when I'm feeling like a slug I usually prefer blandness.
