don't call it paella then, you can do without safron, but if you add extra flavors then it will not ressemble paella

I know traditional paella is green beans and some stupid shit. The one everyone loves though can be done with shrimp, calamary, maybe some mussle, some boneless chicken pieces here and there and that should be it, most of the flavor comes from the burnt rice at the bottom and the shellfish

Fatty meat, like sausage or chorizo. Sweat the onions and peppers in that luscious fat.
Deglaze wine/sherry (key flavor so don't skip this step)
rice goes in, get it toasty in the oil and veggies, add your stock, spices like your soaked saffron, parsley, bay leaf, sazon or whatever you're using.
Cover until done, add your seafood like mussels, prawns, etc in an appropriate amount of time towards the end. Overcooked seafood you do not want!

Paella doesn't have tomatos. The color comes from saffron or for most people even in Spain, paella colorant.

You fry the meat and/or seafood in olive oil, then add the vegetables, then the rice with the water/stock.

idk about that I'm gonna search for a good sellfish paella recipe, for the record I don't even like shellfish but it's what gives paella the flavor and I love it there, don't over think it, "valencian paella" is the original one, but the shellfish one BTFO's it severely

You look like a morbidly obese neckbeard if i had to guess. You can also buy 5 grams of cheap saffron for like 3-4 bucks. Its not as potent as the good stuff but its alarge quantity and will yield you a similar result. Use a teaspoon, or a tablespoon
