I cooked 5.15lbs (2.34kg) of 90/10 ground beef the yesterday, and I was surprised by how much "fat" drained out. It came to about 1lb 6oz.(0.62kg). I would have expected less than 10% of the weight, but ended up with over 26%. The question is why?

Is it significant water weight or something else coming out with the fat, or did I just get cheated with 70/30 labeled as 90/10?

Meat in general is 75% water. If you were able to pour off the liquid, refrigerate it, you'd find your ratios play out with the fat on top. Your math matches USDA expectations.

You didn't get cheated, it's just the way it works, it's water loss, look at the chart. If you were making tacos, just use whatever is cheaper since you have to pour it off before adding taco spices anyway.
