Crusty bread roll, extra mature cheddar, grated and not melted.

That's the secret. Cooking is all about contrast. Tomato soup is hot, sweet, tangy and smooth. Cheese roll is salty, crusty, funky and cool. The contrast is 10/10 no doubt. Far more flavourful than that excuse of a cheese you americans use.

So why not melt the cheese? Melted cheese tatses good but the contrast of the cool cheese and hot soup really creates a flavour and texture explosion. Nothing like it.

I have a super easy recipe that works better than roux. Just cook the macaroni and put into baking pan. Add butter and mix it till it melts and coats the mac. Add salt pepper and any other seasoning you want at this time, I like to put some garlic and onion powder. Let that cool and then add cheese, eggs and milk and stir it up very well. Top with more cheese. Bake.
