Let me be descriptive, last time i addressed this issue i got a warning for being so based.

American cheese isn't cheese. American mac and cheese is so mild that it makes me question the point of adding the extra calories if i can't even taste it. What your tasting is just dairy product not cheese. Cheese needs to be aged and should be nice and salty to contrast the already plain pasta.

Look towards italy and be inspired. A bit of white wine, garlic, good pork and you you have quite the meal on your hands.
