Pan smoking hot. Add too much oil, like 4-5 tbs. Wait till smoking. Crack in two eggs directly, they should sizzle and bubble up immediately. Spoon some oil on top of the yolk, and cook less than one minute, until golden and crispy around edges. Remove onto a paper towel and season immediately with generous salt and fresh ground pepper. Put on toast or eat straight up

I have never seen actual black burnt parts on a fried egg. Crisp browning and bubbly Whites are desirable, though. You need to cook hot and fast if you want the yolk to be totally runny and dippable

I always gotta adjust some of the ratios in this recipe, but eyeball the measurements and follow your heart and this will turn out good. Maybe try one or two eggs and one extra egg yolk as the sauce.

Fry until the egg white is mostly solid white
Put glass lid over the egg
Monitor until the edges of the yolk begin to turn white
Take lid off, add salt and, if you want, pepper
Fry for a few more seconds
