Pork shoulder chop seasoned with Fennell salt and cracked pepper baked on a wire rack, brotatoes scrubbed, diced and boiled in salted water, then drained and mixed with butter, cabbage sliced and microwaved with a slice of butter. You can make gravy if you want. I just put lemon pepper on my potatoes.

One thing I do alot for weeknights is I just bake salmon in the oven. Then I eat it with with veggies like broccoli, cauliflower green beans etc. for weeknights i use frozen veggies. It's easy quick and cheap. I bake enough salmon for 4 meals, heat it next day. I live alone. Healthy too

i portioned ground beef into something approximating bars of soap and then wrapped them in two layers of cellophane and froze them
they won't last months, but should be more than fine for several weeks, have yet to experience freezer burn
anyways i throw one into the fridge in the morning and by the evening it's thawed
i quickly break it up in a 4 qt. pot and fry it until it's browned and then kill the heat and add some taco seasoning
pop some flour tortillas into the microwave for 15 seconds (alternatively wrap in foil and place in an oven/toaster oven)
all you really need now is some shredded cheese and hot sauce
it's just a pot and a wooden spoon to clean
i prefer it to making the taco meat in bulk
the texture is better when it's fresh
takes about 10 minutes to prepare and then another 5 or so to clean up

My current weeknight meal:
1/2 lbs. cubed meat (moo, oink, or cluck)
1/2 lbs. frozen vegetable
1 package Maruchan instant ramen
Glaze/sauce of choice.

Start with ramen in the wok/pan with just enough water to cover on high heat, boil water just long enough to loosen the ramen -- a couple minutes max. Drain ramen and set aside.

Add oil to wok/pan, sear meat.
Add vegetables to pan to heat through.
Add noodles back to pan.
Add glaze/sauce.
Evacuate everything to plate before it starts burning.

I do this same thing pretty much, onions and cilantro are a great addition and if you want to break it up do a chicken breast instead of beef. Also I like to do tortillas directly on the burner, just flip every 20 or so seconds until it gets some good brown spots.

I've been working a lot during the alleged pandemic and for those late nights where I just want something warm in my belly before I pass out I've been doing good old franks and beans a lot.
Especially recently since grilling season has started all the places have decent sausages on sale.

Plenty of other things you can do quick and easy, though. Rub some oil and spices on a few chickenquarters and put them in the oven. Have them with rice and maybe some green beans or peas that you throw into the rice at the very end of the cooktime.

I bought a salmon filet from Aldi and sprayed olive oil on it, followed by lime juice, than covered it in this tasty looking ginger citrus rub, followed by 3 fat pads of Kerry good butter with thyme, and some more lime juice. Making regular old mini potato’s with salt pepper and butter as a side with a bagged Caesar salad. I’ll let you guys know how it turns out in like 15 minutes.

I like to bulk cook different meats, usually a pork shoulder or a pack chicken leg quarters and then pull it and keep it in a container for the week. For meals I'll grab a chunk of it and either have it straight up with some BBQ sauce and veggies, or I'll make it into fried rice or tacos

Meanwhile: throw a handful of frozen mussels in abundant hot olive oil, cover to avoid fat all over the kitchen.

When they start to get some colour you lower the heat and add chopped garlic and chili to taste, finish with dried basil and freshly ground black pepper.

Tbh you can't go wrong just fucking around with a rice bowl. Just cook the rice, brown the meat well , blanch some veg. Remove meat from pan, add aromatics and toss blanched veg in there. Fry on high heat, add whatever flavouring you want (a mix of soy and sugar is great, or soy/oyster/fish sauce/sugar) and add back your meat. Can be done in 15 mins especially if you use frozen veg.
