Yeah fry sauce is a thing but it's not really a dish. Pastrami burgers are an SLC thing that feature fry sauce. Pretty much everyone in Utah will have fry sauce instead of ketchup. Per capita jello consumption may be the highest but I wouldn't say that it's a prominent part of the regional cuisine. Intermountain west/inland northwest really don't have much of a food culture/identity. It's pretty much just burgers/steaks like the rest of flyover country.
