It's lean, brine in apple juice with kosher salt and brown sugar and whatever spices. Easy sides: steam green veggies like broccoli or green beans and dress, rice, salad, cous cous, French lentils, potatoes. When I'm lazy and and doing meat on the grill I nuke some potatoes and finish them on the grill.

Chop up a your favorite herbs, roll it around so it's covered, then wrap it on prosciutto or bacon and roast in the oven at 350 degrees for 20ish minutes. Doesn't take long since it's so small. However you use it make sure to do a brine.
