Which cusine is the most colorful?

My vote is for Indian food, at least for the larger occasions. Chinese food, while being great, is really strict (traditionally) with balance being focused on for cutting methodology, color makeup of the dish, etc. western food doesn’t have anything on SE Asian cuisine as far as color goes but I still think Indian ends up being the most “bright” and certainly a contender for the most color variety.
