Depends on the occasion. If I'm just cooking for myself, I'm not going to all the work of getting a fire going, I'll just cook on the propane grill. If I have friends over, it's time to fire up the kettle or the offset smoker.

Saves you the nasty smell of pouring petrol products on your coals.
If you have one of those gas torches used to kill weeds you can shove that under there instead of the paper.

Isn't the convenience of it the main point though? There's also a good bit less mess with propane, since there's no ash.

It really depends on what and how you want to cook. If you want to do BBQ, then you need smoke. If you want to do grilling, then you'll want heat. But don't think you're limited to just gas or charcoal grills. I have a wood pellet grill for smoking, and I use one of those patio fire pits for grilling.

Once the paper has burned out, most likely only the bottom layer of coals are lit. Wait 15-20 minutes and you'll start to see ash forming on the top layer. NOW it's ready to use.
