Lamb gyro is a godsend. Thinly sliced and right off the spit.

Whole meat is great to use on a big kebab build but you need to mince it. I don't like flaky "real turkish kebab" its like if you minced it would be easier to cut longer strings. Arguably a style preference.

Have a 1600gram kebab under pressure in the fridge to coal grill tomorrow with a few folks and beer. Used 50 % lamb from local producers with 20% fat content and lean 5% fat beef. Bunch of garlic and a load of different spices.

Will be a blast to grill in sunny norway with an unusual 29 celsius. Summer could not get better.
