If you started eating more protein then you'd build more muscle, and we don't digest protein as well as fat and carbs so you're less likely to gain weight from it. I don't think unprocessed forms of carbs are really bad though. Like brown rice seems a lot more filling than white rice which will help maintain a healthy weight.

it's most likely that you were overconsuming calories via your carbohydrate intake, and cutting it out forced you to be more thoughtful of what you were putting into your body. it's pointless to shill an elimination diet of any kind when most people who are medically normal (besides excess fat) just need to be mindful of their daily calorie intake.
