if the hours were posted in good faith, it would account for someone ordering 1 minute before closing, and still having time to prepare and serve the food. This would result in hours being "reduced" but they already effectively are because no one wants to cook a meal for someone when they're halfway through closing shop. I don't work on the line anymore, but I'd schedule meal breaks. Even with a 3h dinner rush, it wasn't usually too hard to get through everyone, and still have half the line shut down by close. If I had to skip my meal to get everyone out by midnight, I skipped my meal - I was a fat fuck back then anyway.

I always let my crew know how I feel about the hours of operation. If we're open, there's a chance they might be cooking. If someone squeaks in before close and an order comes in at fifteen after, we're making it. I had FOH let us know when the place was empty and when the doors were locked, but at least half the grill, one oven, and one fryer stayed on until close. On slow nights, stations would get closed early, but tops would get moved to the backup position until we were properly closed, and nobody left early until their shit was locked down as well as could be expected.

Say FOH closes at 10 - no more new seating. The kitchen would then stop taking orders at 10:30, and could honestly expect to consider itself closing at 11 because of missed staff meals. Day/prep shift becomes 9-5, evening becomes 4-12 with overnight cleaning staff or a straggler/swing 8-4 position to clean if necessary/affordable. I remember me and coworkers fucking with people like you. Always knew they weren’t going to tip because they never do no matter what, were going to be dicks, etc. so we just ignored them for the most part, walked past them to fill other people’s drinks, eventually get around to their order, “forget” the mods they want, eventually bring their food out, take the food back and give it to employees to remake it with mods at the bottom of the food queue, bring it back out eventually. All and all the whole process would take an hour or an hour and a half for them to get their food if they didn’t just walk out after around 45mins. Fun times.
