The servers are what you expect of a fancy place, even have stars under their name, one for every 10 years working, and you see people who have 3 or 4 of them.
In their New York location, their biggest table has a wall sized window to see the cooks preparing the food. They have a speaker system for the main chef to isntruct the others, but you can't hear anything from the other side of the glass. They are more than willing to show you their kitchen and how everything is stored. In short, they are a fancy steakhouse where, on average, you will spend 150$ Per Person, without anything too crazy. This sign would be unthinkable in a place like that.

First, their justification for this shit - "to support our staff and restaurant’s operations, and provide the ability to be successful as a steakhouse designed for the full sit-down experience" - is horseshit. TRUE high-end restaurants - other than the ones doing tasting menus, for obvious reasons - understand that it's not uncommon for folks to drop in for drinks and apps, even if they're not staying for dinner. That's ESPECIALLY the case for steakhouses, where it's not uncommon to grab drinks with clients, or just burn the midnight oil after another meal.

Second, if they want $100/pax, they can either serve that quality of food or suck my dick. I'm not going to order extra dishes to meet some sort of arbitrary minimum. If I want a goddamn steak and appetizer and that equals $99, then they can take my $99 plus tip and fuck off. If they need more money, they need to raise their prices or figure out their spend.

Third, I find it particularly hilarious that a steakhouse is doing this. Steakhouses are the Starbucks-drinking basic bitches of the food world.
