While I think there are some perfectly legitimate (and anticipated) counterarguments in here, I think this post is pretty hysterical, in the literal sense of the word. The claw grip and speed are interrelated because it's almost impossible to do a safe running chop without a claw grip. That is what they have to do with each other. If you want to cut fast, you need the claw. If you cut slowly, I think there are other safe ways to cut.

Indeed, lots of pro chefs might not cut so quickly, but they are working in high-pressure environments with lots of distractions, which again, makes it worth their time to learn the grip. They're also simply doing far more cutting than home cooks, which puts them at greater risk of any cutting injury, and also gives them more of an opportunity to master the grip.

My advice to home cooks is to go slowly, to give their full concentration to their cutting, and to use the grip that is most stable and natural for them. I don't think this is irresponsible or unreasonable, and I won't be taking the video down. There are lots of cooking school instructors who are on record in major publications giving the same basic advice.

I also question your underlying factual assertions here. Your anecdotal experience doesn't tell us much. As I said, there is no quantitative research on the claw grip and whether it reduces the rate and/or severity of injury. Maybe it does, maybe it doesn't. There are many examples in the history of public health when experts and authorities advocated what they believed to be a safer practice, but when studied, it turned out that practice was actually less safe, often because people were simply too likely to do it wrong. I think it's very possible that the claw grip, when attempted by people in the general population, might actually result in more injuries, due to a lack of stability.
