Corn on the cob is great if you are able to wash your hands. If you are walking around a market outside, ehh, not so much, best to keep clean. It's also easier for sharing, giving you room for more delicious market or carnival foods.

Mexican corn is a bit more than simple buttered roasted corn. I don't enjoy biting into mayo and cheese covered corn let alone something spicy right on my lips.

All of this. Make sure the corn is roasted. Now get it off the cob and mix all ingredients into a bowl adding some cilantro and diced red onion. Perfect side dish or topper for tacos of any origin. Impresses guests too. Cotija makes the dish. I'm in AZ but I'm not so sure how available it is across the US.

Roasted poblano, red pepper and Jalapeno
Butter mayo cream or sour cream (1-1-2)
Lime zest and juice
Mexican cheese
Valentina hot sauce
Crushed takies and chipotle seasoning on top
(More commonly tajin is used but that just tastes like salt and also the Takies add a nice crunch)

I tried to get it at the county fair one time. The lady gave me corn in a bowl with mayonnaise and a bunch of shit. I told them I didn't want it and to give me it on the cob. So then they give me a regular corn cob with salt and butter. I ended up just eating it instead of trying to explain. It was less messy anyway. So I've still never tried elote.
