The Amature looks like some box cake a nine year old would make. Since thats the lvl most people on here cook at they'll probably say that looks the best.

The home cook looks like a try hard. Idk why they thought green was a good color.

The expert looks like it would taste the best but it also looks like they put fuck all effort into making it look decent.

i really liked weissman's tres leches recipe because it had you puncture the cake layers with a fork and pour a milky mixture so it soaks it all up
https://youtu.be/EqU_jMyr2P8?t=213
i'm just using his recipe as an example because i don't know if all tres leches recipes do that

russian honey cake has good texture as well because the layers you make aren't pound cakes like traditional layer cake recipes, they're disks you make out of a batter.
https://youtu.be/yHQ-FkiP5Ws?t=237

i've made both and they were delicious. and even though i completely failed at replicating chef john's technique and my layers turned out way thicker, it was still great and not dry. i was only planning on making four layers but only made it up to three.

I don't know how else to describe it. Cake is supposed to be dry, like bread. It is not a wet soupy mess full of custard and cream. That is a pie or a pudding. It can still be moist and flavorful if it's properly prepares, but it is not supposed to be injected with sugar soup to make it appetizing for people who can't enjoy a texture that isn't wet and sloppy.

Look. I enjoy tiramisu as much as the next guy, but it's not fucking cake. It's a pudding. Cake is sweetened bread.

>> No.16153257

>>16153238
Actually there is a category of baked sweet called sweet breads and there is quite a variety to them, and they are drier than cakes usually. There are some cakes that don't get any frosting and could be considered "dry" but even then they have quite a bit if moisture contained in on themselves if you baked them properly. That however it not the case for all cakes, some of them have to have the same ration of filling to sponge to be even made properly.
I do agree that most cakes are way too sweet, but that has to do with bakeries putting too much sugar in both the filing and the sponge. In addition, if the cake is a sloppy mess that has to do with the filling not being set properly or it being put on a warm cake, not because of the addition of filling itself.

I don't care if it's the most moist cake you've ever had in your life if you touch it you're not going to get your hands wet. Would you prefer if I said it's supposed to be firm? I'm talking specifically about the cake itself, not the arrangement of the cake, frosting, or fillings inbetween layers of cake. All I'm saying is you don't go soak a cake in liquid and call it cake. When you do that with bread they call it bread pudding.

>> No.16153290

It truly truly isn't, what you are referring to is sweet breads as was mentioned above. Cake is supposed to have a cakey texture and be moist, if you bread has either of those qualities you fucked up your bread.

That's not true at all. You have terrible taste.
Good cakes should be at least slightly moist. Some cakes are designed to be exceptionally moist, like devil's food or tres de leches. Others, like your super basic angel food or yellow cake should have an appreciable moistness.
Bread should also not be super dry, but there's a huge difference between the two in that bread should have complex gluten networks with a lot of the inside water evaporating to leave a loose crumb. Cakes are the exact opposite, with a soft and dense crumb.
Please do not give any opinions on what food should be. You can tell us what you personally enjoy if you want, not that we'll give a shit, but don't straight up lie to a board full of people who cook every day, for sustenance, pay, or to get laid.

Slightly moist or moist and dense is not wet. What the original poster made was wet. It was a pudding or a pie, not a cake. The correct way to describe a cake would be moist, but too many people take that as wet. Overly moist, dense cakes suck just as much as overly dry cakes if not more. Have you ever had those store bought loaf cakes that are so dense and moist they fall apart as soon as you pick them up? Come on. That's a pastry, and a shit attempt at one. something normal looking like this. 2 layers isn't really layer cake it's just cake, 2 layers is basic cake. so it should have more than 2 layers and some kind of filling in between, with more cake than filling. not too much frosting on the outside.
that's it. that's a good cake.
filling can be anything.
frosting can be anything.

beyond those basic things, a good cake should have the appropriate level of sweetness for the kind of cake that it is and good quality ingredients. if you want to be pretentious, it should have some "je ne sais quoi" the way people add nutmeg to bechamel sauces. maybe a little almond extract, maybe a little cayenne in chocolate, maybe some lemon zest to brighten things up, maybe an interesting decoration. not necessary at all for a good cake though.

i forgot to mention the most basic and important thing of all: texture. cake should be fluffy, not pancakey like that green matcha one. not flat. not dense. not flakey. not too moist. not too dry. not bready.
just fluffy, sweet, and accompanied with the right amount of frosting.

What the fuck am I looking at? They're not even the same recipe, what is this saying? Why does the "good" once look like overcooked lemon poppyseed muffin in cake form? Why does the amateur own infinite shreddee coconut? Why does the "home chef" spend an hour layering pancakes and frosting rather than frost the outside?

In Italy, when times were tough people would use toasted breadcrumbs instead of grated cheese in their pasta dishes. It's actually quite good if you toast them in olive oil and whatnot. I think the expert was going for a posh version of breadcrumbs, which to him were graham crackers. Good concept, bad execution.
