I have his book project smoke. His glaze for pork tenderloins/ribs is god tier.
>1/2 cup brown sugar
>1/2 cup shit bourbon
>1/2 cup dijon mustard
>stick of butter
Bring to a boil and then let cool. Throw on your pork tenderloin or ribs as you are finishing them. I usually throw it on the top shelf of my bbq and glaze it every 5 minutes for about a half hour. Its incredible. Haven't used his other recipes but damn that was the best pork tenderloin i ever ate.

Faggot. Nothing he does is at all practical and absolutely nobody actually replicates the methods he uses. Fucking everything requires thousands of dollars in specialty equipment and everything is ridiculously complicated and expensive. He doesn't seem particularly competent at cooking either, if I had to guess he got a degree in film studies or some shit, then somehow fit the casting for a PBS cooking show, and by a stroke of luck landed the job. His assistants do 100% of the work, he just tosses it on the fire and narrates, reading the script with monotone enthusiasm. Its all fluff and bullshit, honestly I learn nothing useful from watching.
