I guess the same reason they buy vegan food from grocery stores that also have a meat dept.
But the target market for the major chain plant burgers are (uninformed) vegetarians and progressive save-the-planet folks, not vegans; the burger in your pic comes with mayo unless someone specifically requests otherwise, and the one McDonald’s is testing comes with cheese.
Only ‘casual’ vegetarians would actually eat one, as it’s a known fact that the plant patties are cooked on the same equipment as the real ones. Notice the ‘small print’ at the bottom of pic.

That’s why these burgers are advertised as “plant based”, but BK never uses the term “vegetarian” or “vegan”; the burger doesn’t qualify as either because of how they’re grilled and it would be false advertising.
