got gifted one of these because my asian coworker heard that I like cooking. and now my wrist HURTS after trying to use it to prep some food.

Have I just been memed? this stuff is heavy, why do they use this to chop veggies?

>> No.16121333

Vegetable cleavers aren't particularly heavy
Meat cleavers are for cracking bones

cleavers are better if youre doing really big batches or any hard butchery (going through bones instead of just around them)

>Why would I get this over a santoku?
If you’re a rural or working class Chinese peasant, you aren’t going to have a drawer of specialized knives meant for specific things, and a westerner’s idea of a ‘universal’ knife (chef, santoku, gyuto, whatever) isn’t the same as yours, as they don’t regularly need to chop through the body and bones of a whole animal you bought at the market or raised, and you aren’t gonna cry about chopping a few veg with a heavier knife.
Are you a Chinese peasant?

there are two types of cleavers. type 1 is the vegetable cleaver, thin and light and "may" be suitable to cut thru chicken bones. heavy duty meat butchery goes to type 2 cleavers with a wider angle and heft to hack bones.
idk how heavy your cleaver is but if its for butchery it'd weigh a pound or more. otherwise it could be your technique's off as chinese cleavers use a different technique as opposed to western chef knives.
Id watch some youtube videos to get a sense of the movements involved and practice a bit more. you'll get the hang of it

>america calls it cleaver because america is stupid.
america calls it “chinese cleaver” or “vegetable cleaver”, which is okay and and makes it different from “meat cleaver”. It’s both large rectangle knives, but one is meant for skin and bones and meat and one is not
also for the most part america doesn’t like china. america does like Japan and enjoy calling Japanese knives correct names like santoku and nakiri. if china gets better maybe america will also say caidao and gudao for chinese knives.

this
use it for mincing stuff
just roughly cut up whatever you want to mince, then just lift it up and light lightly drop it along the board rapidly until the thing is minced evenly

>> No.16125266

>>16125236
counter height also matter btw
since you're heavily relying on downward motion as opposed to slicing with a western chef's knife, where slice by pulling or pushing the handle towards you, at any angle you like, you tend to be lifting the knife upwards repeatedly to make cuts
If your counter is too high, your arm will get tired much sooner with a vegetable cleaver
There's a Wang Gang video where his cousin couldnt mince some meat effectively because of how tall the table was relative to her height
