Professional? No. French? Yes. Several restaurant owners in my family including my parents so when I wasn't at school I was at their restaurant and I saw how miserable of a life the cooking industry was. But that's not the subject, John is. Most of his videos are super basic stuff and it's a good entry point for people with zero experience in cooking but there are people with actual cooking skills on youtube like Bruno Albouze for example.

Learned how to cook from him. He makes recipes for the common man; stuff that you'll cook when you first start but will gladly return to when you want to eat something nice without days of prep or expensive ingredients.

His videos are without pretention; I have zero clue what his politics are or his life story beyond "i used to cook" and "i like burlesque dancers". You can find all of his ingredients on his blog. You can send his videos to a family member without fear of cringe. The videos are short.

He also teaches new cooks that critical first step of stepping outside of direct copy of recipes.

From what I've seen here the ones who were using uppers were actually the waitstaff. When I talked about a miserable life I was more talking about how they never had any vacation, working both shifts always finishing very late and having to wake up early, all the regulations to follow that kept getting more and more complicated because France has a hard on for creating more and more laws / norms, etc etc

His incessant upward inflection immediately ruins any interest I have in his dishes. It is so frustrating that simply hearing his voice at all when accidentally clicking on a video of his leads to me exiting the tab outright. Maybe I'm autistic, I don't know, but it is very bothersome to hear him talk. He uses the same shitty Garageband track in every video too. It is all just too unpleasant for me to bother with, and that is okay.
